Winter things and Spring things, bread and crochet

I have this old blog quite a while, over or at least 7 years. I thought I might start over, close it altogether, or try to make a new version. I chose make make it newer, and remove old stuff, and like a dummy I deleted all of the previous posting from all those years.
Today I tried to get them back. NO can do.
So I guess I am really starting over. You live and learn ( hopefully) now I wonder why would do such a dumb thing... I'm sure at the time I thought it was brilliant..not so much.

On the crochet front.....
Well, the crochet project I was working on, still not completed. Now I may start over. My son who is 17 and at least a 6 footer, he is my manequin. Too funny. I can't see when I try it on, so I use him for looking how things drape and line up. He's a good sport, and we have a laugh or two. ( Memories for his heart ) He will be an Eagle Scout here in May.

 Anyway I digress.

I tried to take into consideration his long trunk, my project looked short for sure on him, then I tried it on, and it was short on me too. I like things longer, I'm not super tall or anything, I just am more comfortable with things at say fingertip level.

I may start it over. I have one ball of yarn left, and I can test my pattern out so far. I'm ready to work on something else, I tried making another Darlin Dress, and am winging the pattern, so I've done alot of frogging. Maybe it's just time to take a break for a wee bit, or pick up thread and make something which is not yarn. I cannot be yarned out can I ?

I like to always have a project on the hook. I feel rather lost when I don't.

Rather cold and we are expecting snow flurries today, bread...I may make bread.

Sometimes I make an over nighter bread.
The dough is created and sits in the oven overnight to proof, the longer the better, usually mine will sit in there for about 12 hours.  I'll be happy to share the recipe I have for that. It will come out somewhat like sourdough, chewy and crusty...good with soup. And better for you . It is not a high risen bread, but it is really good. No sugar.

The recipe calls for Kallamata Olives,  you can leave them out if you choose and the bread is still very good on it's own.

In a medium bowl:
3/4 tsp active dry yeast
1 1/2 cups lukewarm water
Combine the yeast and the warm water. Cover with plastic or with a clean kitchen towel, proof it about 5 minutes or so, nice and frothy.

In your stand mixer,actually you can mix by hand, with only 3 cups flour, you  combine the salt and the bread flour ( I have also used AP), mix on low  combine using the paddle attachment.

2 tsp salt
3 cups bread flour ( or APF )

Add the yeast mixture/water and mix on low setting until a shaggy dough forms. Cover the bowl with plastic wrap, let dough rise in a warm place. 10-24 hours.

Cover and in the(non heated) oven
after 4 hours, see it is all frothy and rising in the bowl

Note:  Leaving the dough rest for a long time will improve the flavor and texture, and will give the yeast an opportunity to do the leavening and kneading for you. 

Baking Day !

Pre heat oven to 450 degrees. Place a 4qt dutch oven without the lid in the oven for 30 minutes, while your dough is resting.

Preparing the dough
Turn the dough onto a floured surface and press the dough into a flat rectangle. If at this time you would like to add the olives it's now. Sprinkle and fold, once or twice, until all olives are added.
Form the dough into a ball, cover and let rise 30 while you are waiting for your dutch oven to heat. If you need more rising  time, the recipe indicates an hour or two, or until doubled in size.

Pre line your dutch oven prior to baking the bread with parchment paper, no oil is needed. Transfer the dough into the heated dutch oven lined with parchment paper, cover with the lid and bake for 30 minutes, remove lid and bake uncovered for 15 min, or until golden brown.

Remove from oven and transfer to a wire rack to cool completely before slicing.

I posted, then came back after I started the bread and posted pictures. It's early enough that by the time my husband gets home, he will have a nice crunchy bread, tonight it's grilled cheese for him, and my son and & are having cabbage and noodles.

It is an easy peasy go to bread. This one did not rise overnight.

  1. Such a pretty bowl of Easter Eggs! I have never tried making bread completely by hand. We do have a bread machine we use occasionally. Hope you are enjoying a great weekend.
